Food & Nutrition Services (FNS) is the hospital department that produces and delivers patient meals, runs retail dining for staff and visitors, and supports clinical nutrition therapy. Its physical home — the production kitchen, dish room, dry/cold storage, retail venues, and patient-tray logistics — is a high-intensity industrial space embedded in an acute-care building, and its design sits at the intersection of foodservice engineering, infection prevention, building code, and clinical operations.
FNS spans three intertwined missions, and the building program must serve all three:

Most contemporary U.S. acute-care projects choose room service for patient satisfaction (HCAHPS) and food-waste reduction, often paired with cook-chill for production efficiency. The model should be locked by the owner and operator before schematic design, because retrofitting from one model to another is a major capital event.
A well-formed FNS program separates clean and soiled flows and arranges spaces in a one-directional "raw → cooked → served → soiled return" sequence. Typical components:
Critical adjacencies the design must protect: a direct, dedicated link from the loading dock to receiving (no patient or public crossover); vertical service-elevator access dedicated to or prioritized for food carts and soiled return so meals do not share cabs with linen, waste, or the public; and physical separation of soiled return from clean delivery to satisfy infection-prevention review.
